While many distilleries use only one type of yeast, InchDairnie Distillery uses special yeast recipes tailored to each whisky.\u003cbr _mstmutation=\"1\"\u003e\u003cbr _mstmutation=\"1\"\u003e・METHOD\u003cbr _mstmutation=\"1\"\u003eTraditionally, whisky distilleries use \"roller mills,\" but InchDairnie Distillery employs \"hammer mills.\" This produces a fine grist, almost like flour, extracting the full flavor of the grains. InchDairnie Distillery also uses state-of-the-art mash filters. With numerous plates acting as sieves, a highly clear wort can be extracted, drawing out more flavor from the grains. The stills are also specially designed; special pot stills from the Italian company Frilli are used. These stills feature six rectification plates in the neck and bubble cap trays.
