Hombo Shuzo's "Yakusugi Yakushima Jidai Sugi Cask Aging" is a rare cask-aged imo shochu, an experimental yet highly accomplished masterpiece. This shochu is made from white koji and aged patiently in casks crafted from Yakushima cedar.
The woody and spicy aroma of cedar, the powerful alcohol presence unique to Genshu (undiluted shochu), and a mellow sweetness combine in layers, creating a complex and profound flavor that suggests new possibilities for imo shochu.
Recommended Serving Methods
