RETROGRADE (Batch No.001~012) is a craft gin meticulously produced by Hokkaido's Takasu Distillery (Son&Heir Inc.). In an era where unique gins are constantly emerging, this ambitious creation deliberately pursues classic gin excellence, aiming for a high-quality old-style gin that serves as the perfect cocktail base.
The base spirit is carefully selected wheat spirit from the UK. Using an "iStill 500 Hybrid" distiller from the Netherlands, the distillery meticulously cuts the heart from over 140 sections during distillation. Furthermore, the use of concrete tanks from Aizawa High-Pressure Concrete for maturation contributes to an uncompromising production method, resulting in an astonishingly smooth mouthfeel.
Flavor and Aroma Profile
Based on a classical botanical recipe featuring juniper berries and lemon and orange peel from Iwagi, Ehime Prefecture, the gin incorporates local blueberries from Takasu Town, oakmoss, and rare Timur pepper. While maintaining the core structure of traditional gin, this combination results in a soft and subtle spicy kick that provides a pleasant hook to the flavor.
