anCnoc Peaty Cutter is a single malt Scotch whisky produced at the Knockdhu Distillery in the Scottish Highlands. The whisky is named after the "cutter," a hand-operated peat-cutting tool used to cut peat from dry, shallow peat bogs. This allows for the burning of relatively dry peat, resulting in a medium to strong smoky flavor.

Production Method

This whisky is matured in American oak ex-bourbon casks and is non-chill filtered to preserve its natural color. It has a particularly high peat content among the peated series, boasting a phenol content of 20.5 ppm. This emphasizes its rich, smoky flavor​. 

Tasting Notes

• Color: Pale yellow, reminiscent of lemon juice
• Nose: Initially, a rich, oily smoke aroma emerges, gradually transitioning to a medicinal phenolic layer, with prominent notes of ripe peach and oak.
• Taste: Characterized by an ashy taste, followed by a slight bitterness like an apple core, and flavors of leather and spicy vanilla. Subsequently, notes of pink grapefruit and ripe fruit appear, with a spicy, peaty character leading to a juicy finish.
