From Miyake Honten Co., Ltd., the long-established sake brewery "Senfuku" based in Kure City, Hiroshima Prefecture,
its first Japanese whisky has finally been born, following sake and craft gin as a new challenge! 🎉
Its name is――
"Single Malt Japanese Whisky Setouchi Oloroso Sherry Cask"
It will be released on October 6, 2025 (8,500 yen excluding tax).
🍶 A challenge for "Senfuku," which has walked with Kure for over 160 years
"Senfuku," founded in 1860, is a long-established local sake brand that has been loved for many years in Kure, the city where the battleship Yamato was built.
It was a purveyor to the Navy and former Navy, and there's an anecdote that "a dinner table without Senfuku is lonely."
With its soft, never-tiring taste, it remains an indispensable item in Kure households and restaurants today.
In recent years, they have also developed craft gins using Setouchi lemons and amanatsu citrus,
evolving into a brewery that attracts attention both domestically and internationally.
And now, the next stage chosen was "whisky."
🛢️ A "genuine" glass from Setouchi Distillery
Setouchi Distillery is a distillery established by Miyake Honten in Kure City in 2020.
With the desire to produce "whisky that we can truly be confident is delicious,"
they are committed to each step of the process, leveraging the knowledge unique to a sake brewery.
🔬【1】Fermentation: Multiple yeasts and long fermentation
- Uses unpeated malt
- Water source is the undercurrent of Mt. Haigamine, Kure's independent peak (rich in minerals)
- Combined use of distillery yeast + ale yeast for a rich aroma
- Low-temperature, long-term fermentation (90-114 hours), 1.5 times the usual, to achieve a rich mash comparable to ginjo brewing
🔥【2】Distillation: Low cut for rich alcohol quality
- Uses a 1000L copper pot still, with careful distillation in small batches
- For redistillation, a low cut that leaves more tails is adopted instead of a high cut
- Results in a thicker, more complex and profound alcohol quality
🪵【3】Aging: With the four seasons of Setouchi
- Uses 225L Oloroso sherry casks (for faster, deeper maturation)
- Aged for over 3 years in a storage facility in Kure City
- Non-chill filtered and uncolored natural specification
- Turbidity and sediment, being the umami components themselves, are bottled as is
🍷【4】Bottling: All single casks
Normally, multiple casks are blended to average out the taste,
but this whisky is bottled entirely from a single cask.
It is a unique bottle where you can enjoy the individuality of each cask as it is.
🌊 "Setouchi breeze" in the bottle design too
The label features the "Setouchi" logo, the symbol of the series.
The smart bottle is designed with an image of rippling waves and the gentle island breeze.
From the moment you pick it up, you'll feel the tranquil Seto Inland Sea and its passage of time.
