Yamanomori Brewery, founded in 1899, is the oldest brewery in Iki.

While jar fermentation is its distinctive feature, Yamanomori is unique in using jars for both primary and secondary fermentation.

The jars, handmade at the time of the brewery's founding, each have a different capacity.
The desire to preserve traditional methods and taste
produces the deep flavor of jar-fermented shochu.
