賀茂鶴酒造の蔵内でじっくりと貯蔵した清酒を、杉樽に移し替えて杉の香りが程よく移った頃合いを蔵人が見極め、瓶詰めした「樽酒」。広島・西条の蔵元が守り続けてきた伝統の製法で仕上げた一升瓶サイズです。
杉樽が生む芳醇な香りと味わい
酒造好適米・八反錦を使用し、精米歩合69%で醸したもろみを杉の香り豊かな樽に移して貯蔵。杉材から溶け出す香気成分がほどよく酒に移ったタイミングを見極めて瓶詰めするため、樽酒ならではの爽やかな杉の香りとコクのある旨味を一本で楽しめます。日本酒度+2、酸度1.2の落ち着いた味わいで、キレの良い後味も魅力です。
