室町時代に生まれたとされる「菩提もと」で仕込んだ大号令の生原酒。古い酒造りの技法を、搾ったままの姿で味わえます。
古の酒母「菩提もと」で仕込んだ生原酒
大号令を醸すのは、1893年創業、広島県熊野町の馬上酒造場。酒名の由来は「王政復古の大号令」です。菩提もと（菩提酛）は、室町時代に奈良・正暦寺で生まれたとされる酒母造りの方法で、生米を水に浸けて乳酸発酵させた「そやし水」を使うのが特徴です。この一本は、その菩提もとで仕込んだ酒を、加水・火入れをせずに瓶詰めした生原酒。同じ蔵では菩提もとの火入れ純米酒も造られています。
おすすめの楽しみ方
よく冷やして、少しずつ温度を上げながら。チーズ、ぬか漬け、鯖のへしこなど、発酵食品と合わせるのがおすすめです。
