呉市安浦町、瀬戸内海国立公園・野呂山の東麓に蔵を構える盛川酒造。「白鴻 辛口四段仕込」は、蔵元が「辛くて甘い 新感覚の辛口純米酒」と表現する一本です。超辛口まで発酵させたもろみに甘酒四段仕込みを施し、米の旨みと自然な甘みを引き出したうえで、すっきりとした辛口に仕上げています。
超辛口のもろみに甘酒四段仕込み。ふくらみのある辛口
広島県産の中生新千本を使い、全量に原形精米技術「真吟」を採用して精米歩合70％に。軽快で雑味の少ない酒質に仕上げています。日本酒度＋8、酸度1.9、アルコール度数16度（蔵元公表値）。辛口ならではのシャープな切れ味に、ふんわりとした米の甘みと爽やかな酸味が調和。もろみ由来の微炭酸による心地よい刺激と、ぶどうを思わせる穏やかな香りが、すっきりとしたのどごしを演出します。
おすすめの楽しみ方
冷酒から常温、ぬる燗まで、お好みの温度帯でどうぞ。刺身やカルパッチョ、塩焼きなど、素材の味を活かした料理とよく合います。同じ蔵の甘口「四段仕込純米酒 赤ラベル」と飲み比べると、四段仕込みの表情の違いがよくわかります。
