糖質ゼロでも日本酒らしいおいしさを残すために、白鶴は3つのこだわりを重ねています。四段目に麹を仕込んで旨味を引き出す「麹四段製法」、白樺炭でじっくり雑味を取り除く「白樺炭ろ過」、そしてミネラル豊富な「六甲の自然水」での仕込みです。公表値では日本酒度＋23としっかり辛口で、キレのよい味わいです。
「糖質ゼロ」は、食品表示基準に基づき100mlあたり糖質0.5g未満を糖質0と表示しているものです（蔵元公表の熱量は100mlあたり76kcal）。
