Le Rêve Pecorino is a white wine crafted by Velenosi, a producer in Italy's central Marche region, with an unwavering commitment to barrel aging. True to its name, which means "dream" in French, it is the ideal wine envisioned by Angela, the winery's female winemaker.
Pecorino from 40-year-old vines
The 40-year-old Pecorino vines, grown in sandy soil at an altitude of 200 meters, are harvested later than usual to enhance concentration. Fifty percent of the harvested grapes are fermented separately in new French oak barrels, while the remaining 50% is fermented in stainless steel tanks; both portions are then aged for six months. Among Velenosi's white wines, this is the only one to undergo barrel aging, making it a rare and special wine, with an annual production of just 13,000 bottles. Its luminous straw color, almost golden in hue, speaks to its concentration.

A harmonious profile combining toasty nuances reminiscent of almonds and honey with the luscious fruitiness and rich acidity characteristic of the Pecorino grape. It pairs beautifully with full-flavored dishes such as pan-seared white fish, cream-based pasta, and aged cheese. Serving it slightly warmer brings out the complex aromas from barrel aging even more.
