イタリア中部マルケ州の造り手ヴェレノージが、樽熟成にこだわり抜いて生み出した白ワイン「レーヴェ ペコリーノ」。フランス語で「夢」を意味する名の通り、造り手アンジェラ女史が思い描いた理想の一本です。
40年樹齢の古木が育むペコリーノ種
標高200mの砂質土壌に育つ樹齢40年のペコリーノ種を、通常よりも遅摘みして凝縮感を高めています。収穫したブドウの50%はフレンチオークの新樽で、残り50%はステンレスタンクで個別に発酵させたのち、ともに6ヶ月間熟成。ヴェレノージが手がける白ワインの中でも唯一樽熟成を施した特別な一本で、年間生産量はわずか13,000本と希少です。金色に近い輝きのある麦わら色が、その凝縮感を物語ります。
おすすめの楽しみ方
アーモンドや蜂蜜を思わせる香ばしいニュアンスと、ペコリーノ種ならではのとろりとした果実味・豊かな酸が調和した味わい。白身魚のポワレやクリーム系のパスタ、熟成したチーズなど、コクのある料理と好相性です。少し温度を上げて飲むことで、樽熟成由来の複雑な香りがより一層引き立ちます。
