Description
Freshly pressed new sake can have a somewhat sharp flavor, but resting it through the summer smooths out those edges and develops a mellow, savory richness. This is why it is called “Akiagari,” and at Saijotsuru Brewery, it is a popular seasonal staple that many fans eagerly await each year. It is brewed with well water from the brewery in Saijo, Higashihiroshima City, and rice grown in Hiroshima Prefecture, using meticulous brewing techniques passed down by Hiroshima toji brewers.

Warming it gently brings out its rich rice aroma, making it an excellent match for the flavors of autumn. Pair it with seasonal dishes such as mushroom dishes, salt-grilled Pacific saury, and chestnut rice, and enjoy the changing season with every bite.
