In 1998, Kokubu Sake Brewing Cooperative, based in Kokubu, Kirishima, Kagoshima Prefecture, became the first in the industry to introduce Imo Koji Imo. It was created using a groundbreaking method for its time: making koji solely from sweet potatoes without using any rice koji.
Description
Regular sweet potato shochu is made using rice koji, but Imo Koji Imo is a 100% sweet potato shochu made entirely from locally grown sweet potatoes, from the koji to the fermentation. By using no rice at all, it offers a bold yet clear flavor in which the natural sweetness and richness of the ingredients come through directly. As a pioneering brand of sweet potato koji shochu, it continues to be loved by shochu enthusiasts today.

Mix it with hot water to bring out the gentle sweetness of sweet potatoes, warming you from the inside out during the colder months.
