It is a luxurious Daiginjo sake made by pressing without pressure, collecting only the drops that fall naturally by gravity. It comes in an elegant paulownia wood box, making it a fitting special gift for your loved ones.

Key Features

Yamada Nishiki rice, suitable for sake brewing and grown in Hiroshima Prefecture, is polished to 40% and slowly fermented at low temperatures. The most distinctive feature is the "Tobin-tori" method, where only the sake that naturally drips from the bags containing the moromi (fermenting mash) is collected. Although this process is extremely labor-intensive and time-consuming, it produces a clear, pure taste free of impurities.

Flavor and Aroma Profile

Characteristic of Tobin-tori, it boasts an exceptionally aromatic and floral flavor. With a sake meter value of +2.5 and an acidity of 1.6, a refined umami spreads pleasantly in the mouth, accompanied by an elegant Ginjo aroma.

Recommended Enjoyment
