Returning to our roots, we sought out a "Kamotsuru-like sake that values flavor" and once again focused on local Hiroshima ingredients.

This Junmai Daiginjo sake is brewed with the legendary sake rice "Hiroshima Nishiki" and "Kyokai No. 5 yeast (Kamotsuru yeast)," resulting in a gorgeous aroma, soft and mellow sweetness, and a pleasant crispness.

In the Meiji era, it was discovered that yeast produces alcohol, and the Brewing Society of Japan began to pure culture yeast from renowned breweries that produced high-quality sake and distribute it to sake breweries nationwide. This was the beginning of Kyokai yeast. In 1921 (Taisho 10), Kamotsuru monopolized the top three places out of 4,222 entries at the National Alcoholic Beverage Competition. The excellence of Kamotsuru yeast was recognized, and it was distributed to breweries throughout the country as the fifth "Kyokai yeast."

Resurrection of the phantom sake rice "Hiroshima Nishiki"

"Hiroshima Nishiki," revived from seed rice, is a sake-brewing rice variety that was a recommended variety in Hiroshima Prefecture in the early Showa period. It was characterized by small grains and a rich flavor when made into sake, but it stopped being cultivated due to reasons such as being tall and easily falling over. Kamotsuru Sake Brewery, seeking that rich flavor, revived "Hiroshima Nishiki" with the cooperation of commissioned farmers. This sake is a Junmai sake brewed from Hiroshima Nishiki, polished entirely in-house, and handcrafted in the dead of winter by Toji (master brewer) Shigeru Mukuda at Brewery No. 2, which has been operating since 1897.

"The aroma has an elegant floral quality within a gentle impression, with notes of white flowers like lilac, and also a refined rice-like scent, almost like shiratama dango. The fluffy, smooth aroma is like whipped cream, and the moment it touches the palate, it begins with the soft, mellow sweetness characteristic of Hiroshima sake, followed by an expanding umami."
