This exceptional red wine is crafted by Jean-Marc Boillot, grandson of Etienne Sauzet, renowned as one of Burgundy's top white wine producers. Established in 1985 and based in Pommard, this domaine boasts incredibly high quality not only in white wines but also in reds. The cultivation of old vines is carefully tended, and grapes are meticulously hand-picked. From fermentation to aging, thorough dedication is maintained to maximize their charm.
- 100% destemming of rigorously selected harvested grapes.
- Fermentation in stainless steel tanks for 18-21 days, and cold pre-fermentation for 6-8 days.
- After 100% malolactic fermentation, the wine is aged for 13 months without racking in 350L and 390L barrels (30% new oak).
