Manzanilla is a type of sherry produced in the Atlantic port town of Sanlúcar de Barrameda in Cádiz Province, Andalusia, Spain. Its producer, Bodegas Hidalgo-La Gitana, is a long-established sherry house with deep roots in the area.
Description
Made using the white grape variety Palomino Fino, this sherry undergoes biological aging beneath a layer of yeast called flor. Using the solera system, vintages from multiple years are blended as it ages, typically for around 3-5 years. The cool, humid climate unique to Sanlúcar de Barrameda creates a thick layer of flor, resulting in a more delicate and fresh flavor than the fino from Jerez made using the same method. It is characterized by a dry taste with a pale color and notes of saltiness and umami, thought to derive from the chalky soils at the mouth of the Guadalquivir River.
Recommended serving
Chill well to 7-10°C and pour into a glass. It pairs exceptionally well with Spanish tapas such as olives, almonds, and cured ham, as well as seafood dishes. Since the flavor changes easily after opening, we recommend finishing it within about one week.
