Production Method

Based on the shochu-making techniques cultivated by Komasa Jyozo, Kanosuke Distillery uses barley and malt as raw materials and employs a unique yeast and pot still distillation process. In particular, Kanosuke Distillery uses three different-sized copper pot stills to achieve a delicate yet multi-layered aroma and taste. Hioki Distillery uses stainless steel pot stills and vacuum distillation to distill without compromising the flavor of the raw ingredients. The fusion of these two distilleries' techniques creates a deeply complex flavor.
