This masterpiece is truly deserving of being called a "gift from the Dragon Palace." It is a Kimoto Junmai Genshu from the Hana Hato brewery in Ondo, Kure City, aged while gently swaying under oyster rafts in the Seto Inland Sea for an extended period. You can enjoy the mellow and profound flavor created by the traditional "Kimoto-zukuri" brewing method, which has been passed down since the Edo period, combined with ocean aging. On this page, we offer two types: "Nama-zake," which retains its fresh-squeezed vibrancy, and "Hi-ire," which has a more settled taste. Please choose according to your preference.

Key Features

We employ the "Kimoto-zukuri" brewing method, which utilizes the highly vital lactic acid bacteria residing within our facility. Furthermore, by ocean-aging the sake in the waters off Kure City, Hiroshima Prefecture, the gentle swaying of the waves positively influences the sake's quality, resulting in a mellower flavor. Due to the special environment of ocean aging, strict quality control is maintained during production, including a double-layered cap to prevent seawater from entering the bottle.

Flavor and Aroma Characteristics

It features the gentle lactic aroma characteristic of Kimoto-zukuri, along with a rich, robust flavor abundant in acidity and umami. Ocean aging removes any harshness, resulting in a deeper, mellower mouthfeel.

Recommended Ways to Enjoy

Even before aging, this sake was expected to have a high affinity with large, milky Hiroshima oysters, and it pairs exceptionally well with "grilled oysters" in particular. Serving it with grated daikon radish, kabosu, or sudachi will further enhance its flavor. It also pairs very well with all kinds of seafood dishes, such as sake-steamed clams or hard clams.
