Manufacturer's Description

About Yamanomori Shuzojo

The ingredients are rice koji, Iki-grown barley, and Iki groundwater. Yamanomori, utilizing over a century of history and craftsmanship since its establishment, uses rice koji and barley harvested in Iki. Both primary and secondary fermentation are carried out in traditional earthenware pots. The moromi is then atmospherically distilled pot by pot to fully bring out its aroma, and only the parts with stable quality and excellent flavor are collected and aged to produce this authentic barley shochu. The traditional, handmade brewing method, unchanged since its founding, imparts a deep flavor to the liquor.
