They continue to uphold traditional methods, using only fresh sweet potatoes dug up early in the morning and carefully fermenting them in earthenware pots.
The exquisite blend of 80% sweet potato and 20% rice creates a smooth texture and rich umami. It's an unpretentious drink that conveys the brewery's passion and meticulous craftsmanship.
