Mitake, a authentic potato shochu, is brewed by Mitake Shuzo, which has its brewery on Yakushima Island, using the clear subsoil water nurtured by the forests of the World Natural Heritage site. Made from Kogane Sengan sweet potatoes and rice koji, and fermented with white koji, it achieves a soft, elegant potato aroma and a smooth taste.
