RyeLaw Single Grain Inchnagar 46.3% 700ml

"RyeLaw" is the first whisky release from the newly established InchDairnie Distillery in the Lowlands, and it is an ambitious creation that deliberately uses rye. Historically, rye was once used in Scotch whisky in Scotland. InchDairnie Distillery has taken on the challenge of reviving this tradition and adding a modern interpretation with new techniques.

It offers an aromatic profile where characteristic, complex, and gentle rye spices merge with soft vanilla and oak. The taste is a continuum of pepper and ginger derived from rye, enveloped in an oily viscosity, sweet caramel, cereal, and dried fruit notes.

A newly built distillery in Glenrothes, at the heart of Fife, Scotland. Driven by the belief in pursuing whisky "flavor," it employs innovative techniques and equipment to craft new whiskies. Distillation began in Christmas 2015, and in 2023, the first release, "RyeLaw," finally debuted.

【Three Ms for creating innovative whisky】
・MATERIAL
To create complex flavors that express the four seasons of Scotland, all grain ingredients are sourced from farms in Fife. While many distilleries use only one type of yeast, InchDairnie Distillery uses special yeast recipes tailored to each whisky.

・METHOD
Traditionally, whisky distilleries use "roller mills," but InchDairnie Distillery employs "hammer mills." This produces a fine grist, almost like flour, extracting the full flavor of the grains. InchDairnie Distillery also uses state-of-the-art mash filters. With numerous plates acting as sieves, a highly clear wort can be extracted, drawing out more flavor from the grains. The stills are also specially designed; special pot stills from the Italian company Frilli are used. These stills feature six rectification plates in the neck and bubble cap trays. These trays allow for precise control of reflux during spirit cuts.

・MATURATION
The entire maturation process also takes place within InchDairnie Distillery, and new American white oak casks are used for aging. By charring the new casks, the direct aroma of the forest can be experienced.
