“Shiro Kirishima,” the reinvented version of Kirishima Shuzo’s long-selling “Kirishima,” which was trademarked in 1933, was relaunched in 2015 using the company’s uniquely developed “Heisei Miyazaki Yeast.” This sweet-potato shochu is characterized by its rich sweetness from fermentation with white koji and its smooth finish.
Product Description
This authentic sweet-potato shochu is made with “Kogane Sengan” sweet potatoes grown on the shirasu plateaus of southern Kyushu and the pristine underground water of the Kirishima mountain range, known as “Kirishima Fissure Water,” and fermented with white koji. Since the launch of Kuro Kirishima, it had been affectionately known as “Shiro Kirishima” because of its white label, but the name became official with the 2015 relaunch, when the yeast was completely renewed. It features a full-bodied richness and a gentle, softly sweet flavor.

Enjoyed with hot water, its mellow sweetness and aroma gently open up. We recommend pairing it with dishes that highlight the natural flavors of their ingredients, such as sashimi and tempura.
