Among their TOMOÉ series, which showcases the culmination of their techniques, "TOMOÉ Chardonnay Shingetsu" is a representative bottle. It is crafted using only Chardonnay grapes from special plots with restricted yields, and undergoes labor-intensive winemaking methods including barrel fermentation, barrel malolactic fermentation, and sur lie aging.

The creamy, custard-like aroma derived from the barrel stimulates the appetite, while lively acidity reminiscent of citrus and apple core, and buttery vanilla oak nuances, form layers.
