When ume ripens to its absolute limit on the tree, it naturally detaches from the branch and falls. We use 100% fully-ripened Nanko ume that has naturally detached from the branch at the peak of its maturity. Due to its delicate nature and difficulty in handling, this special ume is not distributed in the market.

Aged Below Freezing Point

Fully ripened ume, once detached from the branch, deteriorates quickly, with components degrading even while awaiting processing. Ume harvested for ume wine is flash-frozen to maintain freshness and then aged below freezing point. Choya calls this the "Hyojuku Method."

For over 20 years since then, they have strived for production, continuously making improvements, and this year, they have once again cultivated bountiful ripe Nanko ume for "Hyojuku Ume Wine."
