This is the finest secret sake boasted by Kirei Brewery, a renowned sake brewery in Saijo, Hiroshima. This luxurious Daiginjo is made by pressing sake only with natural gravity, without applying pressure, and collecting only the drops that fall naturally. It is delivered in an elegant paulownia wood box, befitting a special gift for a loved one.

Key Features

Yamada Nishiki rice, suitable for sake brewing and grown in Hiroshima Prefecture, is polished to a high degree of 40% and fermented slowly at low temperatures. The most distinctive feature is the "Tobin-Dori" method, in which only the sake that naturally drips from bags containing moromi (sake mash) is collected. This process is very time-consuming and labor-intensive, but it produces a clear, pure taste free of impurities.

This Tobin-Dori sake is characterized by its extremely fragrant and elegant flavor. It has a sake meter value of +2.5 and an acidity of 1.6, with a refined ginjo aroma and a sophisticated, clear umami that spreads pleasantly in the mouth.
