Kamoizumi Shuzo is a brewery in Saijo, Higashihiroshima, Hiroshima, that has produced only junmai sake since its founding in 1912. It remained committed to junmai sake even when it was uncommon throughout Japan, and is known as a “pioneer of junmai sake.”
Description
“Tsukuga” is a junmai sake named after Yamada Nishiki, a sake rice variety contract-grown in the Tsukuga district of Higashihiroshima, about 6 km from the brewery. Made exclusively with Yamada Nishiki carefully cultivated in the Tsukuga district, blessed with ample sunlight, abundant water, and significant temperature variations, it has the soft, delicate mouthfeel characteristic of Yamada Nishiki. This accomplished sake has also won a gold award at the Slow Food Japan Kan-zake Contest.
Recommended serving
Warming it gently brings out the rice's umami, while serving it chilled offers a crisp, refreshing taste. It pairs especially well with richly seasoned dishes such as simmered foods and yakitori.
