"Umi" is a sweet potato shochu produced by Taikai Shuzo in Kanoya City, Kagoshima Prefecture. It is carefully crafted using Beni Otome sweet potatoes as the main ingredient, fermented with aromatic yellow koji, and distilled at low temperature under reduced pressure. The water used for preparation is "Juzuru" Tarumizu hot spring water.
