- This 1.8-liter bottle, filled with the rich flavor and splendid aroma of barley shochu, has been slumbering in a 1,115-meter-long tunnel in Takachiho Town, Miyazaki Prefecture. And now, after 13 years of slow, slow aging in the deepest, darkest part of that tunnel, it has made its debut as a special limited edition, bearing the name of the founder.

What is long-term aged liquor?
Shochu that has been aged for three years or more in tanks or barrels is called "long-term aged liquor."
This barley shochu "Naoshige" is aged in bottles, and the bottled "Naoshige" was left to slumber for 13 years in the deepest part of the tunnel, still in its bottles. Unlike barrel-aged liquor, it does not acquire an amber color or aroma. However, this clear, transparent "barley shochu" slowly transformed (aged) into a deeply melting flavor in the mouth over the course of 13 years.
