Daishichi Sake Brewery, based in Nihonmatsu, Fukushima Prefecture, is known for its traditional kimoto brewing method. This is the brewery's first liqueur, created from its desire to make "the finest plum liqueur": Kimoto Plum Liqueur.
Product description
While many plum liqueurs are based on shochu (white liquor), this product uses Daishichi's prized junmai kimoto genshu. Selected large 3L-size Nanko plums from Kishu are steeped in it, allowing the umami unique to kimoto brewing to gently envelop the plums' acidity, creating a mellow harmony without adding excessive sugar. The alcohol content is 12%.
Recommended ways to enjoy
Chill to around 10°C and enjoy neat as an aperitif. It is also recommended as a digestif in place of dessert. Serving it on the rocks or mixed with soda creates a lighter taste. It also pairs well with all kinds of Japanese cuisine.
