八代不知火蔵は、熊本県八代市にあるメルシャン八代工場の焼酎蔵です。「白水」は白麹を使った二段仕込みと減圧蒸留で造られ、仕込み水には球磨川の伏流水、割り水には名水百選に選ばれた南阿蘇・白川水源の水を使っています。蔵元は、やわらかくまろやかな味わいを特長に挙げています。こめ焼酎「白水」は国産米と国産米の米麹で造られ、蔵元はやさしい吟醸香とキレのよい後口を特長に挙げています。2018年と2020年には熊本国税局の酒類鑑評会で優等賞を受賞しています。
おすすめの楽しみ方
冷やしてロックにすると吟醸香が引き立ちます。水割りなら刺身や寿司、白身魚のカルパッチョなど、繊細な料理とも好相性。お湯割りでふわりと香りを広げるのもおすすめです。
