Domaine Jean-Marc Boillot is a star domaine that hails from the prestigious Boillot family of the Côte de Beaune and inherits the lineage of Etienne Sauzet, a pinnacle of white wine. This Bourgogne Blanc, crafted by a master of white wine who also served as the first winemaker at Olivier Leflaive, boasts overwhelming quality, made from grapes sourced from exceptional parcels in the villages of Puligny-Montrachet and Volnay.

This wine embodies the domaine's philosophy, transcending the mere AC Bourgogne designation.

• Uses Chardonnay hand-harvested from the "Les Bergeries" lieu-dit in Puligny-Montrachet and the "Les Long Bois" lieu-dit in Volnay.
• After whole-cluster pressing with a pneumatic press, alcoholic fermentation is carried out 100% in oak barrels using carefully selected yeasts.
• Undergoes 100% malolactic fermentation and is aged for 11 months on its lees in 15-30% new oak, without racking. During this time, bâtonnage (lees stirring) is performed every 7-10 days to impart rich body and complexity to the wine.

With its rich aroma and full-bodied fruitiness, it is best enjoyed at a slightly higher temperature (around 10-12°C) to fully bring out its rich potential. It pairs wonderfully with seafood dishes made with butter or cream, and roasted chicken.
