Hamada Shuzo's "Kakushigura" is a barley shochu that is made by carefully selecting barley, fermenting it with white koji, and then distilling it under reduced pressure, before being stored and aged using their unique "Sugi-Tarugakoi" (cedar barrel aging) method. This shochu is characterized by its production method, which is inspired by sake aged in cedar barrels.
