ヴェネト州のルイジ リゲッティが造るヴァルポリチェッラ リパッソ。稲葉によると、アマローネの搾りかすで再発酵させる「リパッソ」で、風味豊かでしっかりとした骨格に仕上げています。
すみれとプルーンの香り、熟成も楽しめるリパッソ
稲葉によると、やや濃い紫がかったルビー色で、すみれの花や甘いプルーンのような香り。果実味が豊かで、爽やかで心地よい余韻が長く続きます。熟成も可能で、造り手のジャンマリアは「5〜6年目が好き」と話していたそうです。フレンチオークの大樽で12カ月熟成させています。
おすすめの楽しみ方
16℃前後で。牛肉の赤ワイン煮やきのこのリゾット、パルミジャーノなどと。少し寝かせて変化を楽しむのもおすすめです。
