1863年創業、広島県竹原市の藤井酒造。蔵に棲みつく微生物だけで醸す、全量生酛造りの蔵として知られています。「白ラベル」は、看板銘柄「龍勢」の定番シリーズに位置づけられた純米吟醸。蔵元自身が「清らかに、辛口。」と表現する、すっきりと澄んだ一本です。
山田錦を生酛で仕込んだ、透明感のある辛口純米吟醸
原料米は山田錦を100％使用し、精米歩合は60％。酒母は生酛で、培養酵母を加えず蔵付き酵母だけで発酵させています。火入れは一回のみ。白桃やマスカットを思わせる清らかな香りがやさしく立ち、山田錦らしいきめ細かな旨みが静かに広がったあと、すっと引く酸が全体を爽やかにまとめます。アルコール度数は17度と高めですが、重たさを感じさせない飲み口です。
おすすめの楽しみ方
蔵元のおすすめは冷酒。寿司や白身魚の昆布締め、湯葉や白和えなど、やさしい味付けの料理と合わせると、酒の清らかさがいっそう引き立ちます。720mlは食卓に置きやすいサイズで、純米吟醸らしい香りと生酛の奥行きを確かめたい方の最初の一本にも向いています。
