柿の渋抜き専用、47度のお酒
「しぶぬき職人」は、宝酒造が柿の渋抜き専用に造ったお酒です。家庭で手軽に、すばやく渋みが抜けるよう、アルコール度数を47度まで高めています。蔵元によると、渋柿のヘタをこのお酒に浸し、新聞紙で包んで密閉容器に入れ、全体に霧吹きをして保存する方法で、5日程度で甘くなるとのことです。

庭の柿や、いただいた渋柿がたくさんあるときに。600mlは量が多いときにも足りやすいサイズです。渋が抜けた柿はそのまま食べるほか、白和えやサラダにも。※飲用ではなく渋抜き用としてお使いください。
