イタリア中部アブルッツォ州、グラン・サッソ山麓のボローニャの丘に蔵を構えるカンティーナ・ザッカニーニ。ボトルの首元に葡萄の小枝(トラルチェット)を結んだ、土地との深い絆を象徴する「トラルチェット」シリーズの看板赤ワインです。
アブルッツォの伝統を体現するモンテプルチアーノ
使用するのは土着品種モンテプルチアーノ・ダブルッツォ100%。中程度の粘土質土壌で、棚仕立て・垣根仕立てにより育てられた葡萄を9月に収穫します。除梗・破砕後、果帽を沈めた状態でじっくりと醸し、温度管理をしながら約15日間発酵。その後ステンレスタンクで自身の澱とともに熟成させ、果実味と骨格をバランスよく仕上げています。
おすすめの楽しみ方
グラスに注ぐと、紫がかった深い紫紅色。完熟した赤い森の果実の香りに、白胡椒を思わせるスパイシーな香りが重なります。口当たりは滑らかで、柔らかくまとまりのあるタンニンの余韻が続きます。14〜16℃程度に軽く冷やし、生ハムやサラミなどの盛り合わせ、肉や野菜を使ったパスタ、しっかりとした具材のピザと合わせるのがおすすめです。
