アブルッツォの黒葡萄が持つ生命力を、軽やかな泡と共に閉じ込めたスパークリングロゼ。カンティーナ・ザッカニーニの「トラルチェット」シリーズの一本で、ボトルの首には手作業で結ばれた葡萄の小枝が飾られています。
黒葡萄由来の華やぎと泡立ち
黒葡萄を優しく圧搾し、静置沈殿させた果汁を低温でゆっくりと発酵。その後、マルティノッティ(シャルマー)方式によりオートクレーブ内で二次発酵(プリーズ・ド・ムース)を行い、泡とともに果実のフレッシュさと香りの幅を丁寧に閉じ込めています。
おすすめの楽しみ方
淡く上品なピンク色に、木苺やイチゴ、カラント、ザクロが織りなす華やかな香り。そこにジンジャーのスパイシーなニュアンスが加わり、飲み飽きない複雑さを演出します。口当たりは軽快で、きめ細かな泡が小さな果実の余韻をほろ苦く爽やかな後味へと運びます。6〜8℃によく冷やして、食前酒として、また魚介の前菜と合わせるのがおすすめです。
