「地酒は文化」をモットーに、亀の尾・山田錦・雄町などの米を地元農家とともに育てる、広島県三次市甲奴町の山岡酒造。その蔵が2013酒造年度に、今は行っていない山廃仕込みで醸した純米吟醸を、瓶のまま倉庫の奥で12年寝かせた熟成酒です。
12年の瓶熟成を経た、綺麗な熟成香とほのかな甘さ
原料米は広島県産の雄町。精米歩合の異なる雄町を使い、自社酵母で醸したと紹介されています（取扱酒販店掲載の蔵元情報）。アルコール分17度（取扱酒販店の公表値）。12年とは思えないほど綺麗に熟成し、古酒らしい風味はほんのり。ほのかな甘さと、ほのかな苦味をともなう密度のある余韻が続きます。
おすすめの楽しみ方
軽く冷やしても、常温でも、お燗にしても楽しめます。特に常温からぬる燗で、ふくよかな味わいが花開きます。豚の角煮、鰻の蒲焼き、熟成チーズなど、味の濃い料理と合わせて。今では造られていない山廃仕込みの熟成酒を、1.8Lでじっくりどうぞ。
